Jeremy, known as “Clark,” is a native of St. Catharines, Ontario. He decided to pursue his college education after about 10 years in the workforce, earning a good salary, but never truly enjoying his work. He yearned for a career that would inspire his daughter and demonstrate that he was happy with his life’s choices. After researching Niagara College and being impressed by the professional level of the chef professors, he enrolled in the Apprentice Cook 2 program, which he graduated from in 2013.
He currently works at the award-winning Benchmark restaurant at the College’s Niagara-on-the-Lake Campus.
“Niagara College taught me what I needed to know and now I am able to apply that knowledge to the team. Perfection is required at the Olympics and the variables for errors are tremendous. Knowing what to do before it gets to that stage is taught by trial and error. I was interested in becoming part of this team to be able to show the world, win or lose, we can hold our heads high and be proud of what we have accomplished. To wear our flag and represent our country is a once-in-a-lifetime opportunity. I would like to own a restaurant and being a member of Junior Culinary Team Canada can definitely help me with that goal.”
